Slow Cooker Taco Meat

Yes I know I've failed you all again. But what with job interviews and family visits since my last post I think it's understandable.

What you'll need:
A crock pot
2 Lbs Chuck Roast
3 cloves of Garlic, minced
1 bunch of Cilantro, finely chopped
1 bunch of Green Onion, chopped
1 Jalapeno Pepper, seeded & chopped
1 8oz can Tomato Sauce (this is not pasta sauce, salsa or tomato paste)
Juice of 1/2 Lime


Get your crock pot out so you can put all your ingredients in as soon as they're ready. Chop up your green onion, cilantro and jalapeno. Divide your onion and cilantro in half. Spread half your onion and cilantro along with your garlic in the bottom of your crock pot.


Lay your meat on top of your other ingredients then top it with the tomato sauce, lime juice and left over onion and cilantro.


Place the lid on your cooker and cook your dinner on high for 4-5 hours or low for 8. 


When your time is up shred your beef and enjoy.


I used my Taco meat to make a taco salad but it's just as good on hard or soft shells.


Always a big fan of crock pot recipes, especially ones as easy as this. This recipe warrants 5 stars The original recipe calls for more spices which I left out. The spices would definitely be good but the dish stands on its own without them. I'll leave the spiciness up to you.

Sugarfree Bliss

This Lent I gave up sugar. Simple right? NO! I have entered an abusive relationship with coffee where I both hate it and need it at the same time. 

This is how I know I gave up the right thing: my sugar craving is something that I can distract myself from with honey or fruit but it never really goes away. This is exactly how my craving for God should be. As Thomas Watson said in The Art of Divine Contentment "Better a fever than a lethargy". I would rather live with an incurable fever and longing for my Heavenly Father than distracted by the fleeting pleasures of this world, sugar included.

What you'll need (sorry no picture this time)
1 cup Coconut Oil (about half a jar)
1 cup Hershey's Dark Cocoa
1 cup Natural Peanut butter
1/2 cup Honey

Getting the coconut oil out of the jar is harder than you'd think. It comes in a solid form and you'll have to scrape it out with a strong spoon. Put the oil in a sauce pan and warm over Medium heat. The oil will melt into a clear liquid.


Add your peanut butter and honey. Once everything has melted together add the cocoa and stir until uniform.


Pour everything into a candy mold. I got my soft mold pan at Michael's. I haven't needed to grease my mold pan but you can if you want. Make sure you put a cookie sheet underneath though otherwise you'll never get it in the fridge.


Let it cool in the fridge for about a half hour then just pop your candies out of their molds. I kept my finished products in a Tupperware container separated by wax paper.


I've made batches with craisins and nuts. You can really add whatever you want. 

Love love love this recipe. The only reason I don't have batches and batches laying around is because I ran out of coconut oil. 5 stars

Skinny Chicken Alfredo and Self-Descriptions

I love how God describes himself in scripture. You can read through any book of the Bible and before too long you run into a self-description of the author. It's almost as if God enjoys reminding us just who is speaking to us as we study His word. Here is a fantastic description I came across in my readings this past week. Isaiah 42 begins with by describing the coming Messiah. Then the Lord speaks to emphasize just what a good, loving and holy God He is. There is a message of a coming savior then a description of the saving God. 

Isaiah 42:5-9
"
Thus says God, the Lord, 
who created the heavens and stretched them out, 
who spread out the earth and what comes from it, 
who gives breath to the people on it
and spirit to those who walk in it: 
'I am the Lord; I have called you in righteousness; 
I will take you by the hand and keep you; 
I will give you as a covenant for the people, 
a light for the nations, 
to open the eyes that are blind, 
to bring out the prisoners from the dungeon, 
from the prison those who sit in darkness. 
I am the Lord; that is my name; 
my glory I give to no other, 
nor my praise to carved idols. 
Behold, the former things have come to pass, 
and new things I now declare; 
before they spring forth 
I tell you of them.'"

What you'll need:
2 Chicken breasts, cubed
1 bag frozen Broccoli cuts
1/2 Onion (or one whole small onion) diced
1 Tbs Olive Oil
3/4 cup Plain or Greek Yogurt
1/4 cup Lite Mayo
1 1/2 cup Milk
3 Tbs Flour
Salt & Pepper to taste



You'll want to start by steaming your broccoli or just microwaving it to make sure it's thawed.


I started cooking my dish in a pan but it was not deep enough to accommodate all the liquid so I had to move everything to a pot half way through. You can make everything in a pot or high-sided pan if you have one. 

Preheat your oven to 350 F. 

On the stove top, cook your onion in your oil until the onions are translucent.



Next add your chicken to the onions and cook over medium-high heat until you are no longer in danger of food poisoning.




Toss the chicken and onions with the flour until a clumpy coating starts to form (about one minute). Stir continuously to make sure nothing burns.




Add your milk, bring to a boil and stir for three minutes. The liquid will thicken up.





Drop the broccoli in your pot and heat through.



Pour in your mayo, yogurt and seasonings and mix everything together.




Pour the contents of your pan into a 2 qt or 8 inch square baking dish. Cover with cheese and bake for 20 minutes.



In the mean time, cook up whatever you want to serve your Alfredo on. I did not have pasta on hand so I made some brown rice.


Once your 20 minutes are up dish up your Alfredo and enjoy a the knowledge that it's less than 300 calories a serving.




This recipe was different. I could definitely taste the mayo. Next time I might leave that out and replace it with more yogurt. Also I think diced tomatoes and/or roasted red peppers might go well with the overall taste of the dish. There was nothing that I disliked about this recipe but there are a few things I would change. On the other hand it was fairly easy and much healthier than most Alfredo sauces. 4 stars

Make Up Granola

Hello everyone! Sorry I missed posting last week, I actually didn't get a chance to make dinner so there was no recipe to review. This week to make up for last week's shortcomings I'll be posting 2 recipes this week. First up a breakfast idea then stay tuned for this week's dinner.

What you'll need:
3 cups Old Fashioned Oats
3/4 cup Almonds (or whatever nuts you prefer, Walnuts are good too)
1/2 Tbs Cinnamon
1/4 cup Honey
1/4 cup Extra Virgin Olive Oil
1 ripe Banana, mashed


Preheat your oven to 350 F. Place your oats, nuts and cinnamon in your baking dish. It is not necessary to grease the pan.


In a pot over Medium heat mix your banana, oil and honey for about 5 minutes or until the oil has completely combined with the other ingredients.


Pour your banana syrup over your dry ingredients.


Stir everything together until all your oats are wet.


Put your pan in the oven for 25-30 minutes. Stir half way through to make sure all the oats are getting toasted.


All done! I love all the granola recipes I've found and adapted from the Minimalist Baker's blog; they're easy and delicious. 5 stars 

Enjoy your granola in the morning with some yogurt then go out and conquer the day.
